Cool pictures, I also use two knives to clean fish. One fine serrated to do all the cleaning and my filet knife is only used to remove the skin from the filet. Enjoy your dinner.

Nicely done. The same way I clean the y bones out of a Pike.

I have always a smooth blade - never thought about using a serrated...interesting. I generally avoid serrated blades because I find them more of a PITA to sharpen (can't do it easily on my knife sharpener so must be by hand). For species like panfish and most eating size bass, I use the utility knife for all the cuts to get the fillets off. Then I use a fillet knife to trim off any soft tissue I don't want and of course to take the skin off. Thanks. Sometimes, I find the texture of WF reminds me of chicken breast.

Same here - it's the best way to get rid of the bones in pike for sure. But I don't take as much care to deal with the lateral line in pike (I usually only fish for them in the fall and some times in the winter so the lateral line meat is usually not muddy or weedy tasting) - haven't had pike in a while though. Do you spend the time to remove the lateral line meat off pike this way?
One thing I remember with pike is that for the tail portion, I sometimes still find some pin-like bones in the bottom piece of meat- have you found that as well? The top portion has none but I have found some in the bottom portion where you would think pin bones would be in the top pieces of meat.

Yes I always get all the bones out following the bones cutting from the centre up towards the fishes back....first above the bones then from the lateral line under the bones.

Also I catch my pike near deeper water to as much in muddy areas air summer long and never get a weedy or muddy taste. You only get that if you fish where there is shallow water only.
