I picked probably the last of my green beans today. Had enough for 3 jars.

I put beans in and maybe a quarter of my hot peppers and a clove of crushed garlic or 2. For the liquid in a 2 cup measuring glass I put 400ml of vinegar, fill rest of glass with water, add 1/2 teaspoon of salt. Bring to a good boil and pour over the beans till 1/4" from top and seal.

Let sit for 3 weeks turning upside down once and awhile. These come out pretty tasty and a little crunchy. In the picture I have 3 I just did and 1 from 10 days ago.

muskyhunter, my boy telling me I added to much vinegar should be more like 60/40 vinegar. You can put almost any veggie in the jar. When I was in college one of the guys put a mixture of veggies in and did the same thing. the hot peppers makes everything a bit hot, can do without the hot if you don't like. Makes a good snack.

Is really easy to make and so far the 5 jars I have made all sealed like they should. only issue is waiting the 3 weeks.

muskyhunter, looks good, I hope it works for you I'd hate to lead you astray . Let me know what you think. I also flip the jars every couple days to make sure it is mixed well. Don't know if it needs this or not or if it helps.

It is all good sadmgb.

I am sure they will be fine. My only concern is I put in a while Jalapeno pepper and I m hoping the pickling process will tone it down a bit?

I guess time will tell.

well had to buy beans this year as mine never even came out of the ground. So I added equal amount of yellow sugar to a couple of jars to see how it turns out. I tried a litre jar of mixed veggies this time, carrots, cauliflower, beans, Hungarian pepper which I put in all the jars, not really ready yet but they are still hot, but I was short on the liquid so had to boil more so I hope it still seals. Now to wait the 3 week minimum.

tried a little different this year. went 500/500ml water/vinegar and a table spoon of sweet pickle spice.

They look great.

My beans were no hell either this year either. Just waiting for the Wife to slow down picking and then I will go and scoop some for the pickling process. Great in ceasers at camp - lol.

I started beans in the house and they were doing really good about 6" tall. Planted outside with my Hungarian wax peppers. All but 1 bean plant died and I planted a role of seeds for beans and they never even came up. Thinking something in soil that beans don't like.

Its not your garden, its the weather. We had phenominol peppers, beans and tomatoes last year. This year was a flop. Several others noted the same thing.
Too dry, then too wet, mother nature wasn't co-operating.
