Well since I had a couple of ducks to cook and boy and new wife were home and see really likes duck, but never had wild duck. So made jalapeno poppers with one breast and BBQ'd the other 3. She was amazed at how good the were.
Poppers
- half a slice of bacon
- chunk of duck about as wide as the bacon
- slice of jalapeno pepper as wide as the bacon
- dab of cream cheese.
role all up with the half slice of bacon and secure with tooth pick. Place in dish and put soya sauce in dish maybe half covered. rotate after 20minutes or so. Place on med high BBQ turning occasionally to cook bacon. Serve
Duck breast
- 3 duck breast
- BBQ with med high heat for 3 minute per side as these were mallards so big breasts.
Sauce
- red wine
- jam (i used my wild grape jam)
3 parts jam, 1 part jam. mix in small pot put on stove over med heat to boil stirring. Reduce to low heat. This will take about 20 minutes so start before duck.
Take duck breast fresh off BBQ, slice 1/2" cross cut of breast pour sauce over the slices and enjoy.
