I caught a catfish the other day and decided to keep it for the smoker The marinade I use is pretty close to the Indian Candy. I put 1 part Italian salad dressing, 1 part soya sauce, half part of yellow sugar, and a pinch of salt. mix up and put catfish that has been cut up. Marinade for 24 to 48hrs then i smoke in my Cameron smoker on the BBQ. Depending on the thickness the time varies. If too thick I will slice horizontally to make it thinner.
