Hey MDB.. Do you find any cross contamination when going from smoking fish to say pork or beef ?? Would the fish add an undesirable flavor to the pork, Cleaning recommendations..??
Ready to give my new smoker a go and wish to do a variety of victims ..

I am with Ralph, I just wash the wire racks, water bowl and wipe out any grease on the bottom. I have never had any issues. I have however put the temp up to 300 and cooked off any fat that I couldn't get out of the corners. At Easter we warmed the hams up in it as well didn't add any smoke but the hams took on a nicer wood smoke flavour. Smoke your fish at 180 ,pork and beef at 220 to 250 slow,,smoke the poultry a bit hotter250 otherwise it ma become rubbery. Your fish looks great brine it, dry it and smoke it, No one can do fish as good as SDC I believe he has the recipe in recipe section under indian candy.

I seldom use a constant temp right from start to finish.
I start with a low temp and increase as time goes by. Temps vary and depend on what I'm smoking. I've never taken the smoker temp over 200 degrees.
The other thing to remember, you only smoke for part of the time. The rest of the time in the smoker is cooking/drying/increasing the temp to a sufficient level so you do not get spoilage.
Any smoker will come with an instruction book and recipes. Start out using them and work out your own variations as you learn and become more experienced.

thanks for all the replies guys hope I don't offend any one but I went with the electric I got the bradly 4 rack that was on sale at C.T. if all goes well smoked quail at next winters meet and greet
