I’ve been using cedar for steelhead and salmon and I really like the flavour. The chips are hard to find...I bought my last bag at Home Hardware but I have made my own from cedar rails.

I use Primarily Maple and Pecan. Both are nice and I find that I don't get the indigestion, from them as I do with Hickory and mesquite.
If I am looking for a stronger smoke I just do it a little longer.
