Well here is a rough idea what I put in the stew.
- 3 squirrels cut in pieces, pat dry, salt and pepper these pieces. In a large heavy pot on high heat with olive oil, put the squirrels in a few pieces at a time. brown them and put to side while you brown the rest. put all to side for later. Lower heat to medium. have lots of mince garlic (6 or more) and 1 spanish onion diced. Place this in pot and cook for 5 minutes stirring. Make sure there is enough olive oil in pot. stir in 3 carrots cut up and 3 celery stalks, cook still on medium of couple minutes. put in 3 table spoons of flour and stir well for couple minutes. Add a large can of guinness and about 900ml box of chicken broth, small can of tomato paste, stir to make sure flour in all mixed in and a couple bay leaves., I also added some of those small potatoes . and rutabaga cubed. Return squirrel pieces back into pot and bring to boil with lid on. Once boiling lower heat to simmer, for a few hours. liguid should cover all. can then remove lid to reduce further for another hour. I may try making dumplings

"Bayliner", rest his soul, had a real "hate on" for the tree rats. I think he would have been proud of you for knocking them off, but I'm not sure about eating them.
When I was looking for recipes, I found the following site. You could train Sam to hunt squirrels for you.

thanks Ralph, but I draw the line at eating heads. Lots on the link just fry, that is the only other way I have eaten them, just thought i'd try something different. I will go back and get some more to fry if this doesn't work out.
here it is almost ready with the dumplings cooking.

Ralph, I met a CO couple years ago, he was really proud of his squirrel dog. In theory it works, squirrels will always go to the other side of the tree to hide from you. You get a dog that goes to that side, the squirrel more afraid of the dog so it comes back to your side. Sam still doesn't like the gun so she wouldn't do well with that. But she is an amazing tracker on any wounded deer.

Well verdict, I will definitely be doing this again, but leave out the mushrooms. Very tasty, would recommend everyone go out and get a couple squirrels and make a stew.

When I was first hunting at 15 used to hunt squirrels and my dad would cook them up....they really did taste just like chicken to me......all dark meat.....absolutely delicious.
