Today's adventure! Lots of out of season bass caught and released but a nice 14" crappie and 27" pike were also brought in for some fish tacos! Also lost another large pike at the hole when the hook caught the ice.

I’m on Keto so it’s a bit different. Dredge fish in almond flour, dip in egg and milk mix, then “bread” in a mix of almond flour, Parmesan cheese, lemon pepper seasoning, and dill. Lightly sprinkle paprika on both sides. Let sit at room temperature for 20 minutes so breading can adhere better.
Pan fry in a mix of olive oil and butter. I use a lettuce wrap and added home made tartar sauce and coleslaw. My husband is not on Keto but prefers the lettuce wrap instead of a flour tortilla.
