rhubarb Muffins

I took off my first round of rhubarb this morning to make muffins. These are amazing and freeze well.

I double the recipe, and make 2 batches one today maybe the other the next rainy day. As this recipe used butter milk which I find terrible. So I buy a litre use half today and the other half before it goes bad, if that is possible to tell.

I also triple the topping part as I find it not quite enough. I lightly press the topping into the muffing before the oven.

For the size of the rhubarb, I take about 16 stakes cut length wise then cut into small pieces but not to fine. I will show picture of finished product with exactly how many it made.

This afternoon will be making walleye cakes from last summers fish.

So I made 39 muffins by doubling the recipe. Picture is a little dark, muffins are not, cooked for 23 minutes in my oven.
