We have about a 1/2 acre of leeks that grow on the hillside behind our house. My wife did a leek/potato soup in the instant pot a few weeks ago, and it was fantastic. I was at work so didn’t get a chance to see exactly what she put in it, but I will definitely be picking a bunch more so she can make some more soup in the future. Accompanied with a homemade sourdough bread, it’s a very good meal for a cool, wet spring day.

Dave's leek and others soup ..
Wash and clean leeks and greens, potatoes ,carrots,celery and onion fully..
In a large sauce pan ( or large pot ) place leeks,greens and veggies with cold water ..
Bring water to a boil and cook until veggies are tender ..
Remove from heat and mash leeks and veggies together with their cooking liquid ( some times I put in blender)
Add milk,cream,salt,pepper and caraway seed..
Return sauce pan to stove and heat gently , being careful not to let the cream boil
Pour into soup bowls ; dot with butter and garnish with chopped leek leaves ( but at this point I put soup away to cool and enjoy the next day , brings out the flavor )
Ingredients..
25 wild leeks ( forget the store bought ones )
6 medium potatoes
5 cups cold water..
3 cups milk
1 cup whipping cream(35 %) 1 tsp salt
1 tsp caraway seed
1/2 cup butter
4 large carrots..
1 lg onion..
6 celery stalks
2 tbs oil ..
1 tsp salt..
1 tsp pepper
I prefer to let the soup simmer for quite a while ( covered ) at least 1/2 hr ..As said best the next day , we make this fairly large batch and freeze portion sizes for later enjoyment .
To add , during prep a glass of a hearty red wine makes the whole venture more enjoyable..
