Well had baked pickerel for supper tonight, caught last summer. Here is what I do.
-in a in a 8 X 13 glass oven safe dish, I think that about the size - 4 pickerel filets (2 fish) - salt - pepper - garlic ground - lemon seasoning - lemon sliced - red onion 2 slices - rice - butter
Pre-heat oven to 350F
place 2 filtets on the bottom of dish, put all seasoning on these 2 fillets, put onion rings on fish and half the thinly sliced lemon. dab butter chips on the fish. Now put the other 2 fillets on top of these 2 (sandwich). Top these with seasoning, onion rings and lemon slices. Place in oven for 25 minutes.
Cook 1 cup of rice while the fish are cooking.
When all is done serve fish on top of a bed of rice. I spoon some of the liquid over the fish and rice.
