Well it's the wife's birthday, so I'm smoking ribs. I'm using one of the bradley recipes. Cover the ribs with yellow mustard, lightly cover the ribs with the mustard then put on your favorite rub. Let stand for 10 minutes, then wrap and put in fridge over night. Bring smoker up to 270F for an hour, the put ribs in. After about 30min set smoker to 220. Smoke with favourite smoke for 4 hours. Change water after the 4 hours and put in fresh water. Turn the racks and cook for another 4 or 5 hours.

While this is going on make a peach pie for desert.

So final product. cooked a bit to long, but I couldn't do anything about that. Still pretty good.

Hey Bud I always wrap them in foil and finish them the final few degrees. Otherwise you may want to mop them with a apple cider vinegar/butter baste. sorry for the late reply I would of chimed in earlier. Happy Birthday to the wife, Peach pie and all did you churn up some ice cream as well.

Hey Steve

They look good. You have a newer digital smoker so can get up to 270 degrees. I have an Original Bradley Smoker (OBS) and have trouble getting mine to 225 empty and if I have stuff in it, about 200 is my max temp.

I haven't done ribs in the OBS for years as I have a good oven and BBQ recipe. I might try some ribs in the OBS, by putting a couple of hours of smoke on them, and then out and into the oven, wrapped in foil and then on the BBQ.

mydogbites, actually did have homemade ice cream, how did you know.

I did the same ribs a couple weeks ago and cooked for the 8 hours calls for and they were perfect.

My oldest son was coming for supper and was 1.5hr late so they were a bit dry. They are still very good and we all enjoyed them.

Ralph, I know where you are coming from, my old bradley is the same as yours, in fact it still in my garage. Giving it to the boy one of these days.
