Tried my first batch in the pressure cooker ,little bit of salt and pepper and a tsp of olive oil tastes amazing , all 4 jars sealed well i just didnt pack the jars tight enough and theres a bit of air space in the jar,looking for tips and recipes from anyone else who cans thier own salmon.

I know it's an older post but, the air space is no problem at the top of the jar. I use a pretty simple recipe, slice the salmon like streaks so they stand up on end in the jar and then fill the center hole with more chunks, a little dill powder and a mini clove of garlic or garlic powder, into the canner for 100 minutes. I had some over 5 years old, just as good as day one.
