> First Wild Leeks of 2022, WL & Potato & Ham Soup

Went to my usual spot today to check for WL. I was not disappointed.

Harvested a pail full and now ready to make soup.

Worst part of harvesting the leeks is washing and cleaning them when you get home.

Nice load there, how about fiddleheads. Have they come and gone if you know..
What will you do with your load of leeks if I may ask..

Here is my soup recipe. I had enough leeks to quadruple the recipe.

This time, I did not use bacon. I put some oil in the pot and cooked things that way.

A month or so ago I bought 1 of the round fully cooked hams when it was on sale, cut it into quarters and froze them. Today, I thawed out and diced 2 quarters and added them to the soup after I added the cream and blended everything. I didn't use heavy cream, I used 10% cereal cream instead.

As you can see I have used the recipe a few times.

I will put it in containers and freeze.

Wow, nice haul of leaks. Love leak soup.

I use to pick wild asparagus when I was turkey hunting near Sarnia.
I miss both.

I don't think they do, but I'm careful to harvest selectively and leave about half the plants there to let them add more bulbs to the group. I was out today and found a very large area of them, the bulbs have almost doubled in size from a few weeks ago. 2 plastic grocery bags full and I could barely see the difference in what I took. Made 2 big and one medium jar of pickled ramps, should be ready in 3 weeks.

I'm with Fisherman, I don't think they do. I do the same as he does, I only take a small number of plants from any group.
