Lake Simcoe Day Huts

Looking for a recommendation for a day hut operator on the Innisfil side to take the "Ole Lady" for Valentines day. Not really interested in Perch so much, Rather get into some bigger critters.
Used to fish Simcoe in my own hut or "runnin and gunnin" years back, but now limited to a couple times a year in a Nippissing Bungalow. (Sucks to get old...) Any ways she says there'll be no more Nippissing until I take her out for a daytrip.
