Smoked steelhead, What wood do you use?

I’m smoking some steelhead with my old faithful Lil Chief smoker. I found a bag of cedar wood chips which is my favorite for salmon or steelhead. I was wondering what everyone else’s favorite was or if there is much difference.

Any of the following: Apple, Cherry, Alder ,or Maple.

Have never used cedar.

Very nice ! I use a cedar plank on the BBQ but didn’t think to do it in the smoker.

Mesquite wood chips for me.

I would love to try chips from a peach tree some times me though.

I usually put 3 hours of smoke on my fish.

With the Bradley, each wood puck lasts 20 minutes. I often use a mixture of Apple, Cherry and Maple for each of the 3 hours.
